Ingredients
- 1 lb chicken thighs, diced
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1 tbsp freshly grated ginger
- 1 tsp turmeric powder
- 3 large carrots, sliced
- 2 cups baby spinach
- 4 cups bone broth
- 1 cup coconut milk
- 1 tbsp lemon juice
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onions, garlic, ginger, and turmeric until fragrant.
- Add chicken pieces and cook until lightly browned.
- Stir in carrots, bone broth, and coconut milk.
- Simmer for 20–25 minutes until carrots are tender.
- Add spinach, lemon juice, salt, and pepper.
- Garnish with cilantro and serve warm.
