Ingredients (Serves 3–4)
Roasted Chickpeas
- 420g can chickpeas, drained and rinsed
- ½ tbsp olive oil
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp smoked paprika
- Pinch salt and pepper
Roasted Cauliflower
- 1 small head cauliflower, cut into florets
- ½ tbsp olive oil
- 1 tsp onion powder
- 1 tsp cumin
- 2 tsp smoked paprika
- Pinch salt and pepper
Tabouli-Style Herb Salad
- 1 bunch curly parsley, finely chopped (about 2 cups)
- ½ red onion, finely diced
- 1 large tomato, finely diced
- 1 medium cucumber, finely diced
- Juice from 1 lemon
- Pinch of salt
Additional Toppings
- 200g hummus (store-bought or homemade)
- ⅓ cup pomegranate arils (you know….the seeds)
- 1 tbsp sesame seeds
Instructions
1. Roast the Vegetables
Preheat oven to 200°C (400°F).
Place cauliflower on a lined baking tray. Add olive oil and seasonings. Toss well to coat.
On a separate lined tray, add chickpeas with olive oil and seasonings. Toss to coat.
Bake both trays (cauliflower on top rack) for approximately 35 minutes, until cauliflower is tender and chickpeas are slightly crisp.
2. Prepare the Fresh Herb Salad
While the vegetables roast, combine parsley, red onion, tomato, cucumber, lemon juice, and salt in a bowl. Toss well and set aside.
3. Assemble the Bowls
Spread hummus as the base of each bowl.
Top with:
- Roasted cauliflower
- Roasted chickpeas
- Tabouli-style herb salad
- Pomegranate seeds
- Sesame seeds
Serve warm or room temperature.
