This recipe is designed to support your energy levels and milk supply, giving you a warm, comforting meal with minimal effort. Just toss everything in, set it, and come back to a hearty meal ready to fuel your amazing body.
Crock-Pot Nourishing Lentil Soup
Yields: 6-8 servings (Great for leftovers!)
Prep Time: 15 minutes
Cook Time: 6-8 hours on low, or 3-4 hours on high
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup dry brown or green lentils, rinsed
- 6 cups vegetable broth (or chicken broth)
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 bay leaf
- Salt and freshly ground black pepper to taste
- Optional additions: 1 cup chopped spinach or kale (stir in during last 30 minutes), a squeeze of lemon juice before serving, a sprinkle of nutritional yeast for extra B vitamins.
Instructions:
- Sauté (Optional but Recommended!): In a skillet over medium heat, warm the olive oil. Add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant. (While you can skip this step and add raw veggies directly to the slow cooker, a quick sauté enhances flavor!)
- Combine in Crock-Pot: Transfer the sautéed vegetables (or raw, if skipping sauté) to your slow cooker. Add the diced tomatoes (undrained), rinsed lentils, vegetable broth, thyme, rosemary, and bay leaf.
- Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the lentils are tender.
- Finish: Carefully remove and discard the bay leaf. Season with salt and pepper to taste. If using spinach or kale, stir it in during the last 30 minutes of cooking until wilted.
- Serve: Ladle into bowls and enjoy! A squeeze of fresh lemon juice at the end brightens the flavor beautifully.
