Ingredients:

 1C Organic Gluten Free Oats

1/4C organic, pitted cherries (I used frozen, but if you can get fresh, they’re best)

1/4C either raspberries or strawberries. I liked strawberries but, again, use what is in season

1tsp Chia seed

1tsp raw cacao nibs

1/2 small ripe avocado-remove seed, dice fruit to small chunks

2Tbsp cacao powder

Sea Salt

1tsp vanilla

1/4C nut milk of your choice. I used Hemp

Optional 1tsp superfood Maca powder

Optional handful of pecans. Crushed. (hint: use the bottom of a glass to crush in large chunks)

Directions:

Mash the avocado and mix with the cacao powder.. Until not chunky, not smooth. . You may not use all of this mixture.

In a saucepan combine cherries, berries, vanilla, cacao nibs and seeds. Begin to warm. Add oats last. (hold nut milk until last) Stir. Add oats. Slowly stir in nut milk and continue to warm mixture through. Then take small teaspoon size ‘blobs’ of the avocado/chocolate mix and drop them into the oats. Gently fold them around until the entire mix is warm, but do not ‘stir’ to break up the chocolate.  When your mix comes to a quick boil, remove from heat.

Fold into a bowl and top with a sprinkle of nuts. Your house will smell like you’ve made cookies….and each bite should taste like chocolate covered cherries. Biting into the chocolate chunks is really the best part of the whole dish!

Enjoy!!
