Turkey Chili
Easy Postpartum Meal (to freeze or eat for dinner tonight!)
This is a super easy meal that can be re-heated a couple of times and it’s great for healing and nourishment postpartum. It packs plenty of protein and fiber–which, believe me, you need after delivery. You can also eat this with gluten free cassava chips or organic corn chips, if you can tolerate corn. I am a firm believer that you should only eat warm, healing foods after delivery (based on Ayurvedic principals of healing) and this meal fits the bill!
Ingredients:
- 1 Tbsp olive oil
- 1 large onion, chopped
- 3-4 cloves garlic, minced
- 1lb ground turkey (I prefer organic, pasture raised….but whatever you can find is great. Ground chicken works too)
- 1 yellow and red bell pepper, chopped
- 1 can/box diced tomatoes (typically 28oz), undrained
- 1 can/box black beans, rinsed and drained
- 1 can/box red kidney beans, rinsed and drained
- 1/4C chili powder. Less if you aren’t a fan of chili powder.
- 2C (preferably homemade) chicken or beef bone broth or stock. If you don’t have time to make your own, don’t worry! Do the best you can.
- 1 1/2 tsp sea salt
- 2 tsp cumin
For your postpartum turkey chili: In a large stock pot- saute onions & bell peppers in olive oil over medium heat until the onions are translucent. Add ground meat and garlic and cook until browned. Add remaining ingredients and stir well to combine. Reduce heat and simmer for 45 minutes, stirring occasionally.
